Professorship of Food Metabolome
Strengthened by the trend towards plant-based diets, our research focuses on the determination of secondary plant metabolites, all of which help reduce the risk of noncommunicable diseases (NCDs), including heart disease, cancer, and diabetes. The group has strong expertise in the analysis of small compounds using mass spectrometric approaches and is focusing on the characterization of dynamic changes in the nutritional composition of foods from farm to plate. We study, for instance, the influence of genetic diversity, the effects of growth conditions or chemical changes induced by storage conditions. Moreover, we are interested if these changes impact healthy eating.
